Cultivation
Cultivation is totally manual with patient procedures and ancient tools handed down for centuries, since the moment the bulb is buried, then removed, picked and restored in August.
Waiting for the bloom that takes place between the end of October and the beginning of November when, at dawn, the precious flowers are collected, before the sun hurt them.

Workmanship
Then, stems are separated from the rest of the flower, including yellow filaments, once used as precious ingredient in painting and weaving.

Drying
The last stage, the most delicate, is the dessication. At the last stage, a sort of toasting, the stems are put into a sieve which is hung inside a heated fireplace with woods.
A process passed down through the centuries to preserve the original aroma of this precious spice.
