Saffron flavored cookies

  1. Preparation of saffron: Soak saffron stigmas in a coffee cup with warm milk for at least 2 hours, covering with kitchen foil.
  2. Dough preparation: In a bowl, beat 1 whole egg and 2 yolks with sugar until light and fluffy.
  3. Adding the ingredients: Add butter left at room temperature, flours, vanilla, milk with saffron stigmas and mix well.
  4. Kneading the dough: Transfer the dough to a work surface and knead it to a taut, elastic mass.
    Let the dough rest covered for at least 30 minutes.
  5. Shaping the cookies: Roll out the dough with a rolling pin until it is about 5-6 mm thick. Cut the cookies into desired shapes, such as medallions, diamonds or squares.
  6. Baking: Arrange the cookies on a buttered baking sheet and bake them in a preheated oven at 180 degrees for about 30 minutes, or until golden brown.
  7. Decoration: Once baked, transfer the cookies to a tray and dust them with plenty of powdered sugar.

  • No. 2 Yolks
  • 100 g Butter
  • 150 g Sugar
  • 150 g Semi-wholemeal flour
  • 150 g White “0” flour
  • No. 1 sachet of vanilla powder
  • No. 1 Teaspoonful of baking powder
  • No. 1 Coffee cup of lukewarm milk
  • 0.2 g Saffron stigmas
